Pointing a camera at your lunch and getting a calorie count feels like magic. It's actually a chain of educated guesses — and knowing where the guesses live is what makes the tool useful.
What actually happens when AI reads your plate
Modern meal-photo logging runs on vision-language models trained on enormous numbers of food images. When you snap a plate, the model performs several steps in one pass: it identifies the foods (grilled chicken, white rice, broccoli), estimates the portion of each from visual cues like plate coverage and apparent height, and then maps those portions onto nutrition data to produce calories and macronutrients. Restaurant cooking is generous with fat precisely because it makes food taste better, so restaurant estimates skew low more often than home-cooked ones. This is the single largest source of underestimation.
Sauces and dressings. A salad's leaves might be 50 calories while the dressing carries 250. Creamy, glossy, or emulsified sauces are calorie-dense and hard to size from appearance — a thin coating and a heavy pour photograph almost identically.
Portion depth. A photo taken from directly above flattens the third dimension. A shallow spread of rice and a tall heap can cover the same area of plate while differing by double the amount. Bowls are the worst case: a deep bowl hides most of its contents below the rim.
Look-alike swaps. Full-fat versus low-fat yogurt, butter versus margarine, sugar-sweetened versus diet cola — visually identical, calorically different. No camera can resolve these; only you can.
How much drift are we talking about?
Research on image-based dietary assessment generally finds single-meal estimates can miss by a meaningful margin in either direction, with errors shrinking when portions are typical and foods are simple. Two things keep this in perspective. First, human self-reporting is also inaccurate — studies have long shown people under-report their intake substantially, and tediously weighing food has its own compliance problem: people quit. - Be consistent. If your logging bias is stable, the week-over-week trend stays honest even when absolute numbers wobble.
How photo logging compares to the alternatives
Every logging method trades accuracy against effort, and the trade decides whether you're still doing it in March. A food scale plus a database is the accuracy champion for home cooking — and nearly useless at a restaurant, where you'd be weighing someone else's recipe. Manual database logging without a scale quietly inherits the same portion-guessing problem photos have, except your memory of the plate is a worse witness than a picture of it. Over a month, the mixture yields a diary that is complete, mostly accurate, and — the part that actually predicts results — still being kept.
